Watermelon Cucumber Cooler

Ingredients

  • FOR THE CUCUMBER SIMPLE SYRUP:
  • 1 cup Sugar
  • 1 cup Water
  • 2 whole Small Cucumbers
  • FOR THE COOLER:
  • 4 cups Watermelon, Cubed
  • 4 ounces, fluid White Rum
  • 3 ounces, fluid Simple Syrup Infused With Cucumber
  • Soda Water
  • Watermelon And Cucmber For Garnish

Preparation

For the cucumber simple syrup: Place sugar and water in a small saucepan over medium low heat and stir to dissolve sugar. Remove from heat and let cool slightly. Add the cucumber and pour the syrup into a sealed container and place it into the refrigerator to cool.

For the cooler: Add the watermelon, rum, 3 ounces simple syrup into a blender and blend. Pour into 4 glasses with ice, top with soda water. Use extra watermelon and cucumber to garnish.
