This is a variation of the mojito that really makes Sotol shine.
- 1 ounce, fluid Lime Juice
- 10 leaves Fresh Sage
- ½ ounces, fluid Agave Nectar
- 2 ounces, fluid Silver (Unaged) Sotol (Hacienda De Chihuahua)
- 4 ounces, fluid Soda Water
Add lime juice and sage leaves to a cocktail shaker. Muddle gently.
Add the remainder of the ingredients (except the soda water) and shake. Dump into a Collins glass and top with soda water.
